| This ice cream is light, creamy, fancy, and of course, green! Make sure to eat it before the leprechauns take it! |

| Recipe: Ingredients: 2 cups of heavy cream 1 1/2 cups of whole milk 3/4 cup of sugar separated 1/2 tsp of salt 5-6 drops of green food coloring 7 egg yolks Equipment: Ice cream maker Large Bowl Whisk Directions: 1. First thing you need to do is, pour the milk, cream, salt, and 1/2cup of sugar into a pot and heat on medium high heat. Do not let the mixture come to a boil. Remove from heat at approximately 175 degrees F° (80°C). 2. In a large bowl, whisk together the egg yolks and remaining sugar until the mixture is lighter in color. 3. Take the cooled-down milk mixture and slowly pour it into the egg yolk mixture, about half a cup at a time. Slow mixing prevents the eggs from cooking. Add food coloring. 4. Once incorporated, set the mixture on medium-high heat until it reaches 175°F (or 80°C). Immediately remove from the stove. Pour into large heat-resistant container. Put the mixture in the fridge for at least four hours or overnight. 5. After cooling, pour it into an ice cream maker. Churn the ice cream to your desired consistency. Freeze for at least two hours. Then, serve! (Optional) If you do not want to use food coloring, you can always use green tea or leprechaun clothing coloring! |
