Peanut Butter Eggs, a holiday twist on a classic Peanut Butter Cup or Kinder Egg! Although a little flatter than an egg, these treats taste like fun!!

| Ingredients: 1 cup of creamy peanut butter 5 tbsp unsalted butter room temperature 1 tsp of vanilla 2 cups of powdered sugar 2 tbsp of milk 2 cups semisweet chocolate 2 tbsp of coconut oil Directions: 1. Using a stand or hand mixer in a large bowl, cream together your peanut butter, softened butter, and vanilla. 2. Slowly add in powdered sugar, a spoonful at a time. Scrape down the bowl and mix until fully incorporated. If mixture is a little dry, add a little milk. It should be a clay-like texture. 3. Take about 1-2 tablespoons of the peanut butter mixture and form the shape of a ball. The flatten out on baking sheet and form the shape of eggs. Do the same for the rest of the treats. 4. Place baking sheet in the fridge until firm, about 20-30 minutes. In the meantime, melt the chocolate with the coconut oil. Either use a stove top or microwave in short 15 sec bursts. 5. Take the baking sheet out of the fridge. Place one of the cooled eggs on a fork and dip in chocolate. Place back on the baking sheet and repeat the same for the other eggs. 6. Put the eggs back in the fridge for another 15 minutes and then serve! NOTE: If you choose to put sprinkles, do so before the chocolate is hard, otherwise the sprinkles will not set. |
